Domaine Servin is a seventh generation family-run estate with a total of 32 hectares of vineyards scattered throughout the Chablis area, many of which are in the top Grand and Premier Cru sites.
The current owner is Francois. It was his father Marcel who established the domaine in the village of Chablis after the second world war, although both Francois’s grandfather and great grandfather were growers there too. Today Francois Servin makes wines that attract great praise from critics – wines that “Chablis fanatics will die for” according to Wine Spectator.
Les Pargues is a forgotten Premier Cru Chablis vineyard that lost its status during WW1 – it was too far from the surrounding villages for the local women to maintain. However, it enjoys the same exposure as its neighbouring Premiers and achieves similar high levels of ripeness.
2008 was an exceptional vintage in Chablis. This wine has a classic mineral and wet stone aroma with ripe fruit and good concentration. An elegant partner to your best fish, seafood or poultry dishes.
This wine is perfect for enjoying now and will continue to be at its peak until the end of 2011.
Domaine Servin Les Pargues 2008 Chablis can be purchased individually from Laithwaites or can be purchased as part of their Laithwaites Cellar Classics wine club.
